So we tried something new, Pumpkin Brulee. I have never made any kind of Brulee before, but it was actually easy and boy was that tasty! Last year I tried making pumpkin flan and it was a bit of a nightmare, so I was hoping this wouldn't turn out the same and I was happily surprised! The recipe is at the bottom of the post! Enjoy!
Pumpkin Brulee
Makes 8 servings
1 can (15oz) solid-pack pumpkin
1/2 cup brown sugar
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp salt
2 omega-3 enriched eggs
1 cup fat-free evaporated milk
2 Tbsp turbinado sugar
1 Tbsp orange zest (not the bath soap)
1. Preheat oven to 325 F. Coat eight 4oz ramekins with cooking spray, and set aside.
2. Combine pumpkin and brown sugar in a large bowl. Add cinnamon, ginger, nutmeg, cloves, and salt. Stir until well combined. Add eggs and milk, and mix until thoroughly combined. Divide pumpkin mixture equally among ramekins.
3. Arrange ramekins on a baking sheet and bake for 30min. Remove from oven and sprinkle 3/4 teaspoon turbinado sugar over each dish. Broil for 2-4min, until sugar melts. Serve warm. Garnish with orange zest.
